Gluten-Free, Vegan Peanut Butter Cookie Sandwich

This recipe is the perfect guilt-free treat made with minimal ingredients, which are easily found in your kitchen. We’ve made the cookies with oat flour, ground almonds and sweetened them with coconut sugar. Sandwiching this between a big scoop peanut butter banana ice cream is the perfect combination for warm summer days.

What do you need? Ingredients:

Peanut Butter Cookies

  • 140g Farmers & Co Creamy or Crunchy Peanut butter
  • 100g oat flour
  • 75g ground almonds
  • 50g olive oil
  • 50g coconut sugar
  • 50ml maple syrup
  • ½ teaspoon vanilla essence
  • 120g dark chocolate
  • Pinch of sea salt

Ice Cream

  • 3 tablespoons of Farmers & Co Creamy or Crunchy Peanut butter
  • 225g Frozen Banana
  • Pinch of sea salt

Start Making!

  • To make the cookies, preheat the oven to 150 degrees Celsius.
  • Mix everything together In a bowl.
  • Roll into 8 cookie shapes and place these on a baking tray.
  • Bake for 13-15 minutes and then leave to cool.
  • Whilst the cookies cool, make the ice cream. Add the frozen banana to the blender.
  • Once the bananas have blended, add the peanut butter and sea salt and blend again.
  • To assemble, take a scoop of ice cream and place this on top of a cookie. Place another cookie on top to make a sandwich.
